O'kay, moving on!
Today we are going to make some Sugar Cookie Party Mix!
For about a year my family has been pretty addicted to Party Popcorn. I am sure you can tell by reading this blog! However, I felt like it was time to discover a new yummy mix! Like the Party Popcorn, Sugar Cookie Party Mix can be customized for different holidays, seasons, and events. I am excited to fix it many different ways with all sorts of add-ins!
Basic Sugar Cookie Party Mix
adapted from the Sugar Cookie Chex Mix recipe from General Mills
6 C. Rice Chex Cereal
1/4 C. butter or margarine
1/4 C. granulated sugar
2 T. light corn syrup
2 tsp. vanilla extract
1/4-1/2 C. powdered sugar
melted chocolate, white chocolate, or vanilla for drizzling
sprinkles
Directions:
Pour the 6 cups of cereal into a medium sized microwavable bowl. Melt butter in a 2 C. or larger glass measuring dish on high for 30 seconds. Add granulated sugar and light corn syrup. Stir. Place back in microwave and heat for an additional 30 seconds or until you are able to stir the mixture smooth. Add vanilla extract and stir. Pour over cereal and gently stir until cereal is completely coated. Place in microwave and cook on high for 2 minutes, stirring well after 1 minute. Add 1/4 cup of the powdered sugar and stir until coated adding more of the powdered sugar if needed until the cereal is coated very well. Spread out onto a foil lined baking sheet. Melt your chocolate (or vanilla) and drizzle over mix. Add sprinkles. Let set and then break apart and enjoy!
