Valentine's Peanut Butter Cookies & Printable Tags

Did everyone have a great weekend?  I hope so!  Our weekend was pretty nice.  After a busy last couple of months I got to sleep late and get a really good cleaning in.  My daughter cleaned her closet all by herself, it looks great, and I am super proud of her!  Sunday I overslept and we didn't make it to church.  Err... I really don't like when that happens.  I did however make these yummy peanut butter cookies!  I haven't shared a good baking post in a while so with all of the extra sleep and chores I got in this weekend I am energized and inspired!  I hope you enjoy!

I had forgotten how awesome peanut butter cookies are!  I haven't made them in forever!  These are my husband's favorite cookie too so I feel a bit terrible about that.  He doesn't have to worry though because I found this awesome recipe on Food Network so I will be making them more often now. 

Peanut Butter Cookies

1 cup sugar
1 stick butter, at room temperature
1 egg
1 cup smooth peanut butter (I used Jif)
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups all purpose flour

Preheat oven to 375 degrees.  Line a cookie sheet with parchment paper.  In large bowl, cream together sugar and butter.  Beat in egg to mixture.  Mix in peanut butter and vanilla until smooth and creamy.  Stir in salt, baking soda, and flour until well combined.  Roll dough into 1-inch balls and then roll in sugar.  Place on baking sheet and flatten with a fork.  Bake for 12-15 minutes.

These cookies were really easy and quick to make.  I added a heart sprinkle to the center of each cookie to make them fun for Valentine's Day.  I gently pressed the sprinkles down into the cookies just after I removed them from the oven.  Then I quickly transferred them to a cookie rack to cool.  I also wrapped them in 2-inch wide strips of parchment paper and tied a little bakers twine around them.  Then I added this silly tag to them.  You are welcome to the tag too!  Download and print them here.
